Carneros Chardonnay, 2012
Chandon is best known as one of America’s top sparkling wines. Less known is Domaine Chandon also produces limited quantities of varietal wines from our estate vineyards. These wines are crafted by drawing on experience with traditional Champagne varietals and by showcasing select parcels from our Carneros ranch, where Chandon was among the pioneering growers and vintners of the region.
The 2012 growing season for Chardonnay was ideal in every way. Gentle winter rains left just enough ground water for the vines to establish a moderate canopy that allowed just the right amount of sunlight to reach each cluster. Moderate daytime temperatures and cool nights from spring to late summer resulted in slow maturation, allowing the fruit to develop superb complexity while retaining bright acidity.
Alluring aromas of jasmine, honey, star anise, meyer lemon and Asian pear lead to the round, rich palate. Baked apple and lemon cream are supported by well-integrated oak and a clean, mineral-laced finish.
Our Carneros Chardonnay is extremely versatile. It can be served with a wide range of cheeses, from aged Gouda to farmstead cheddar. It’s also delicious with savory tarts and salads. For a main course consider Petrale sole with lemon and capers or a pork chop seared in a bit of butter.
